difference in the world! Position Information The Meat Science
Laboratory Technician, under general supervision, oversees the
processing of beef, pork, and lamb carcasses and maintains the
sanitation of the Meat Laboratory. Responsibilities: -Reviews and
maintains accurate records for Hazard Analysis and Critical Control
Points (HACCP) and Food Safety and Inspection Service (FSIS).
-Conducts and supervises the harvest of cattle, swine, and sheep.
-Conducts and supervises the processing of beef, pork, and lamb
carcasses. -Conducts and supervises the sale of beef, lamb, and
pork products. -Assists with meat science research projects and
laboratories. -Orders supplies and equipment used in the
performance of maintaining the laboratory and processing meat
products. -Assists with short courses, public exhibitions, and
other activities associated with the Meat Laboratory. Required
Qualifications: -High school diploma or equivalent combination of
education and experience. -Five years of related experience in the
meat industry. Other Requirements: -Knowledge of Hazard Analysis
and Critical Control Points (HACCP) and Food Safety and Inspection
Service (FSIS) procedures. -Ability to multitask and work
cooperatively with others. Ability to harvest and process beef,
